Cherry Clafoutis Tart
Cherries, cherry jam & pistachio. With the cherries we take them to the thickest most point we can to make them super jammy and unctuous. Lashings of cherry jam is then spread into the pastry base and finished with a touch of almond cream and then the pancake batter. We use coconut yoghurt in our mix to ensure its dairy free. Baked and then glazed with more cherry jam and a crumbling of pistachio nuts to add texture and colour, plus a little foil to the cherry.
